Monastic Main country. In Würzburg, the Bürgerspital (founded 1316) and the Juliusspital (1576) are among the oldest wine estates in the world still in operation — charitable hospitals whose vineyards have funded their wards for centuries. Silvaner arrived by documented record in 1659 and found here its finest expression, dry and stony on the shell-limestone slopes.

The region's signature is a shape: the bocksbeutel, a flattened flask that has held Franken's wine for centuries and remains its legal privilege. The great crus rise steeply from the loops of the Main — the Stein above Würzburg, the Escherndorfer Lump — in a climate of warm, dry summers and treacherous frost pockets that keeps every vintage honest.
